With an expertly honed culinary skill set, Leiths Food & Wine-trained, Chef Charles brings a wealth of experience to the table. He began his career under the mentorship of renowned Head Chef Steve Groves at the acclaimed Roux at Parliament Square. Building on this solid foundation, Charles went on to gain invaluable Michelin Star experience while serving at the prestigious The Westbury in Mayfair with Chef Alyn Williams, where he wowed guests. Most recently, Charles was at The Grill @ The Dorchester Hotel, one of London’s most iconic luxury hotels on Park Lane where he spent 4 years under Tom Booton. Here, he cooked exquisite British seasonal menus that are nothing short of masterpieces. For his private dining clients, Charles brings together his wealth of experience and a deep appreciation for culinary traditions passed down from his grandmother in Spain. He creates unforgettable dining experiences for his clients, focusing on a perfect balance of refined luxury and comforting family favourites.

How did you get into cooking?

My Abuela had a huge wealth of cooking knowledge, and experience which she was always eager to pass down and share with me. Cooking with her was always fun and extremely rewarding. I was prepping game at the age of 5!

How does your upbringing influence your cooking style?

As a family we use to live in Spain, so this has a massive influence on my cooking style, my food style is using great produce, simply and freshly. I love fish cookery which is a massive part of the little town were we use to live.

What do you love most about being a chef?

Cooking, creating memorable moments and making a smile is certainly something which keeps me going! I also am very grateful to be so hands on and able to use the high class ingredients and produce I use, living in London enables me to source such great things!

If you weren’t a chef, what do you think you would be?

Astronaut maybe?

If you could bring 3 items to a desert island what would you bring and what would you make with them?

Garlic, butter and bread - Garlic Bread!

Most interesting kitchen story?

Cooking for ‘Who’s Cooking Dinner’ was certainly a memorable experience, cooking alongside the best in the industry for charity.

Have you ever sat down to dinner not knowing which Michelin star chef or newly crowned Masterchef: The Professional would be cooking your four-course meal? The likes of Gordon Ramsay, Rick Stein, Angela Hartnett, Tom Kerridge and more have cooked at this incredibly unique event, where 20 tables of 10 guests have their own “surprise” chef for the night. Now in its 23rd year and back again for 2023, Leukaemia UK’s flagship fundraising event, Who’s Cooking Dinner?


What are your favourite hobbies/things to do on your days off away from the kitchen?

Socialising with my friends, taking long strolls in all the beautiful parks London has to offer! Going to art galleries with friends and also enjoy going to the gym for fitness

Where do you want to be with your career in 5 years time?

Running my own large scale catering company!
